Ingredients
- 1 large zucchini
- 1 cup canned cannellini beans, rinsed and drained

Method

- Heat the remaining 1 tablespoon of olive oil in a skillet over high heat until shimmering.
- Add the zucchini ribbons and the remaining garlic, tossing quickly for 2 minutes until the zucchini is tender-crisp and slightly charred at the edges.
- Spread the white bean purée across the base of a shallow serving bowl.
- Arrange the charred zucchini ribbons on top of the purée.
- Dust the dish generously with smoked paprika, toasted pine nuts, and fresh mint before serving.
