Most dinners do not need dairy. They need what dairy was doing, which is usually fat, or acid, or something creamy to carry the sauce. Once you know which of those you are replacing, the swap is easy.
Dairy free is not the same as lactose free, and neither is safe for a milk allergy. If you are cooking for an allergy, read the label on the actual package every time.
Butter is fat, and often salt. Olive oil, tahini, ghee if you tolerate it, or the fat already on the meat.
Cream is fat plus body. Coconut milk, blended cashews, tahini loosened with water, or a spoon of the starchy water from the pasta.
Yogurt is acid and cool. Lemon, sumac, pomegranate molasses, pickled turnip, a coconut yogurt if you want the texture too.
Cheese is salt and savor. Toasted nuts, olives, capers, anchovy, nutritional yeast, a harder squeeze of lemon than feels right.
Milk in a batter is liquid. Water works. So does any plant milk that has no strong flavor of its own.
Some food was never built on dairy, and the easiest dairy free dinner is the one that never had to be converted.
A few of those lean on an egg instead. If eggs are out as well, which of the five jobs the egg was doing decides what replaces it.
The obvious ones are easy. These are the ones people get caught by.
Bread. Milk powder is common in soft breads, brioche and many sandwich loaves.
Stock cubes and gravy granules. Often carry milk solids.
Chips and crackers. Cheese and butter flavorings, including on flavors that sound like they have neither.
Processed meat. Sausages and burgers can use milk protein as a binder.
Chocolate. Dark chocolate is frequently made on shared lines, and the label will say so.
Margarine. Some contain buttermilk or whey.
Ghee. Clarified, so most of the milk solids are gone, but not all. Not a safe swap for an allergy.
The word to look for is not milk. It is whey, casein, caseinate, lactose, lactalbumin, curds, milk solids.
Creamy is the thing people miss, and it is the easiest to get back.
Tahini sauce. Tahini, lemon, garlic, salt, cold water. It will seize and go stiff before it goes smooth, so keep adding water past the point it looks ruined. Good on everything roasted.
Onion and stock. Cook onions low until they are properly soft and sweet, add stock, blend. That is a cream sauce with no cream in it, and it carries whatever you put in it.
Coconut milk with something sharp. Coconut alone tastes like pudding. Lemon, lime or tamarind takes the sweetness off it and it stops reading as dessert.
Cross contamination matters more than ingredients. A pan that had butter in it, a shared fryer, a knife that cut cheese first.
Keep one pan, one board and one spoon that are not used for dairy. It is a smaller change than it sounds, and it removes the failure that catches people who read every label correctly.
None of that helps at somebody else's table, which is a different problem. In Ramadan it is mostly the ghee already in the rice and the sweets.
